Day with Mom!

Hey everyone!

So, as you can see I bought a new theme! This one is called Pretty Young Thing and I absolutely love it because its super girly and fun!

Anyways, I woke up this morning from the most awful sleep I’ve had in a long time. The winds were so strong last night that they were shaking my balcony doors constantly! I hardly got any sleep! Hopefully the winds will be tamer tonight!

Breakfast

On the bright side, Alana made a delicious breakfast this morning. In the mix? All of my favorite things!

Oats with dried fruit (cherries, raisins, and apricots), cinnamon, milk, a touch of brown sugar, a chopped apple,and toasted pecans! What better way to start off the day? 🙂

After breakfast, I showered and got ready to go shopping with my mom. We went to a new store that opened while I was at school and then we stopped at Trader Joe’s to buy some cookie butter that Allie raves about!

We were disappointed to hear that they were all out for a month! 😦

I’m checking 2 other locations tomorrow! HA!

Lunch

We got home and we were all starving so I quickly made my homemade soup! So healthy and perfect for the cold weather!

Tofu Shirataki Vegetable Soup

makes 5 servings

Ingredients:

  • 2 bags of Tofu Shirataki Noodles
  • 4 cups of low sodium chicken broth
  • 1 small zucchini
  • 2 large carrots
  • 2 celery stalks
  • 1/2 cup of sliced mushrooms
  • pepper for taste
  • cooked chicken or turkey cut into chunks

Procedure:

  1. Drain the noodles and set aside to dry.
  2. Bring chicken broth to a boil.
  3. Add chopped veggies and let cook for about 5 minutes.
  4. Add in the noodles and chicken or turkey meat.
  5. Season with pepper to taste and serve!

Sadly, I didn’t get to fit in any exercise today but I’m glad I’ve been exercising more than I did while I was at school!

I’m off to see my best friend and catch up on college life! We’re going out to Indian later, so I’ll be back with another post 🙂

Failed attempt at a salad from AEPhi. But still satisfying!

In the mix: romaine lettuce, beets, broccoli, mushrooms, carrots, green beans, dried fruit, cashews, feta, and parmesan cheese.

Nana’s Swedish Meatballs over whole wheat Ezekiel Sprouted Grain Pasta. Sprinkled with parmesan and shredded cheddar!

Turkey, cheese, lettuce, cranberry sauce, stuffing, and whole grain mustard spread on squaw bread! DELISHHHH!

A great semester comes to an end…

Hey everyone! My first semester of college is complete and I’m home for the next month for Winter Break! I’m so happy now that I have no more stress from exams, or anything school-related and I can simply RELAX.

Or at least until Dec.19 when my online class starts. Sex, Health and AIDS should be interesting…

And until I see my final grades for the semester. I’m happy that I did fairly well. All A’s and B’s woooo!

Anyways, a lot has happened since I last posted. I have a new part-time job with Herbalife as a distributor. Herbalife is a growing nutrition and wellness company that sells products ranging from protein shakes and bars to skin care products and energy and fitness supplements.  The company targets weight management through good nutrition and personal health.

It’s really exciting because on January 10th, FabULife Nutrition Club is opening a store on campus where all of the distributors at the U of A will be able to work and sell Herbalife products and smoothies.

A few products I’ve tried which have all been amazing are the chicken soup, the chocolate peanut butter and vanilla almond protein bars, Lift-off, the herbal aloe concentrate, and the shampoo and conditioner.

These bars are nutrition packed with only 140 calories and 10 g of protein per bar.

The Herbalife soup packets are also great because they have 16 g of protein and not as much sodium as you would see in a regular can of soup. Only 80 calories as well!

This particular product comes in individually packaged tablets that helps with energy sustainability and mental clarity. I placed one tablet in about 8 oz of water and drank this before my workout this morning.

I definitely noticed a difference!

This one is lemon-lime flavor. Tastes just like sprite!

Breakfast

Big bowl of cereal with KASHI GoLean, Heirloom whole grain flakes, and Arrowhead Mills Puffed Wheat cereal with blueberries and raspberries

After breakfast, I headed to the gym for a much-needed workout. Finals week left me with little time to exercise, so I’m glad that I can get back on track while at home for the break.

When I got home, I was famished so I made one of my old favorites.

Peanut butter and sliced bananas on squaw bread with a side of carrots!

Blueberry Banana Muffins + Shopping Galore!

The bar mitzvah planning has all been coming together! Mom is home (YAY!) and family friends fly in from Maryland tomorrow! It’s starting to get crazy around here with last-minute errands plus getting everything together for COLLEGE! Ahhh it’s so closeee, just three more weekss!!

Since I haven’t baked anything in what seems like forever, I woke up this morning and made The Biggest Loser Banana Berry Muffins! They were super yummy, moist and healthy, without being too sweet. Just the way I like them 🙂

Berry Banana Muffins

Makes 12 (1-muffin) servings

Ingredients

1 1/2 cups unprocessed wheat bran or oat bran ( I used 1 cup wheat bran and 1/2 cup oat bran)
1 cup white whole wheat flour
2 tablespoons ground flaxseed
1 1/4 teaspoons baking soda
1 teaspoon ground cinnamon
1/8 teaspoon salt
3/4 cup unsweetened vanilla almond milk or fat-free milk  vanilla soy milk
1/4 cup agave nectar or dark honey
2 ripe medium bananas,mashed with a fork
1 large egg
2 tablespoons olive oil  no sugar added applesauce
1 teaspoon vanilla extract
1 cup fresh (or frozen) blueberries
1/2 cup pitted chopped prunes (optional)

Method
1. Position a rack in the center of the oven and pre-heat the oven to 400 degrees F. Lightly coat a nonstick 12-cup muffin pan with cooking oil spray.

2. In a medium bowl, combine the bran, flour, flaxseed, baking soda, cinnamon, and salt. Set aside.

3.In another medium bowl or in a blender, combine the milk, agave nectar or honey, bananas, egg, oil, and vanilla until smooth.

4. Make a well in the center of the dry ingredients and pour in 1/3 of the liquid mixture. Using a spoon, stir until smooth. Add the remaining liquid mixture and stir just until combined. Add the blueberries and prunes, if desired; stir again, but do not over mix.

5. Spoon 1/4 cup batter into each prepared muffin cup. Bake for about 14 minutes, or until the tops spring back when pressed gently in the centers. Do not overbake. Cool in the pan on a wire rack for 10 minutes before removing the muffins from the pan. Serve warm, or cool completely on the rack.

Breakfast!

I really liked these muffins! They’re healthy, completely whole grain and have no added sugars!

After breakfast, I showered and got ready for a big day of shopping. OH, but first I played around with my new I PHONE!! It’s so cool, I love it!

Lunch

Grilled Cheese is literally one of my all-time favorite sandwiches.

My version is 1 slice of cheddar cheese and 1 laughing cow light spread on both sides of 2 slices of whole wheat bread! SO creamy and delicious! It literally melts in your mouth!

I also had some carrots and an apple on the side!

At the mall, I got a pair of black heels for the Bar Mitzvah party, two shirts from Urban Outfitters, eyeliner and mascara from Sephora, and two bras from Victoria’s Secret!

Yes I DO spend a lot of time shopping and yes I DID spent approximately 5 hours at the mall. ( You probably won’t believe me, but I’m really not a compulsive shopper!)

BAD 🙂

Mom was carrying some of the other bags. Trust me this isn’t all of it!

Dinner

Turkey Meatloaf, brown rice (sprinkled with cumin of course!) and some steamed veggies.

Just what I wanted!

After dinner, I went out to do some errands with my mom, and watched The Bachelorette! It’s down to the final two and honestly, I think Ashley would be happy with JP or Ben 🙂

Shopping sure does wear you out! I’m off to sleep! Night guys!
