Curried Chicken Salad Sandwich Take 2

Hi Everyone!!

These past few days have been super hectic. Late last night, Dad, Alana, Jeremy and I drove my mom to LAX. She had to go back to Cleveland, OH to visit my granny who’s sick 😦 She’s 94!

I woke up pretty late… 9:30 – and made THIS masterpiece!

Breakfast

MY ABSOLUTE FAVORITE OMELETTE

After doing some more Bar Mitzvah stuff, I made lunch using leftover curried chicken from dinner last night.

I turned it into my recreation of the Curried Chicken Salad Sandwich I had at Urth on July 4th.

All I did was chop up 2 celery stalks, add in 1/4 cup of raisins (soaked in hot water), and mixed in 2 T of olive oil based mayonnaise. I definitely could have eaten it like this… BUT I needed some carbs!!

Lunch

Toasting the whole grain bread made lunch even more yummy 🙂

After lunch, I decided I needed to stock up on a few ESSENTIALS…

(from left to right) Apples, Jump Start Bar, Canned Soup (Amy’s Brand are my favorite), Van’s Light Waffles, Soymilk, Applesauce (no sugar added!), broccoli, and strawberries.

I love this homemade bar. No artificial stuff!

Yesterday, I made Anne’s Almond Butter Banana Bars for breakfast. They were delicious and a huge hit in my house! I snacked on a leftover one when I got home 🙂


Dinner

Simple salmon seasoned with pepper, pasta, and some broccoli that I bought today 🙂

After dinner, I was craving something sweet, so Alana, Jeremy and I shared some cupcakes we picked up from the Cupcakery yesterday.

Gingerbread, Red Velvet, and Chocolate Chip! Yumm.

Now, I’m gonna finish up watching Juno! Haven’t seen that movie in SO long! Goodnight 🙂
