Bring on 2012!

Good morning & Happy New Year!!

Hope everyone stayed safe and had a good time last night!

I decided to stay in and have a nice dinner with Ali and her family this New Years. 2nd annual!!

Breakfast

Breakfast was Matzoh Brei with a side of fruit. I haven’t had it in soo long even though it’s so easy to make! Imagine if I made this in my dorm! Hmmm…. 🙂

                          Matzoh Brie + side of strawberries and apple slices

                                                               serves 1

Ingredients:

  • 1 sheet of matzoh (I used plain but you can use egg, whole wheat, etc)
  • 1 egg
  • cinnamon

Procedure:

1.) Crack an egg into a medium-sized bowl and mix with 1/2 tsp cinnamon.

2.) Break up the sheet of matzoh into bite-sized pieces and toss them into the egg mixture until they’re thoroughly coated.

3.) Pour everything into a large skillet sprayed with cooking spray and cook on medium heat until golden brown (approximately 5-7 minutes)

Note: Many people like to add maple syrup on top! It’s super yummy and adds lots more flavor! I tend to like mine plain though 🙂

Anyways, after breakfast, Alana, my mom, and I took an hour-long walk around the neighborhood. Love how in California it’s a perfect 75 degrees outside!

Lunch

tuna fish & crackers plus a cheese stick and carrots

The rest of the day was spent figuring out how to set up my new recipe page! It is almost fully up to date! YAY!

And of course helping out in the kitchen + making homemade pita bread! Whole Wheat of course…

Dinner

Dessert

Bethenny Frankel’s Boo Boo Banana Bread!

They were a total hit! Everyone had a piece + some strawberries on the side (unpictured)

There’s nothing like spending time with great friends and family!

I’m off to go eat some breakfast and run some errands with Alana and my mom! Have a great day everyone! xo
