A Rainy Night = Indian Food + Homemade Cookies!

Last night before we left for dinner, it was pouring rain! It doesn’t rain much in Tucson, so it was definitely a bit of a change!

We still decided to go out to the restaurant instead of calling in for delivery. Nothing like warm, comforting Indian food on a cold and rainy night!

First, we were served complimentary Indian papadum bread.

Ali, Alana, and I shared two classes Indian dishes.

We decided to save room for some homemade baking of course. I haven’t had much of anything homemade in so long!

We made my Whole Grain Oatmeal Raisin cookie recipe, but decided to do half of the batter with chocolate chips!

So yummy and whole grain too!

Whole Grain Oatmeal Raisin Cookies

makes 8 cookies

  • 1/2 stick softened butter
  • 1/2 cup white sugar
  • 1 egg
  • 1/3 cup oats
  • 2/3 cup whole wheat flour
  • 2 ½ Tbsp graham flour (if you don’t have graham flour, just use more whole wheat)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup raisins or chocolate chips
  • 3/4 tsp cinnamon
  1. Pre-heat oven to 325° F
  2. Mix dry ingredients in a small bowl and set aside (except chocolate chips/raisins).
  3. Beat butter and sugar with an electric mixer.
  4. Add egg to butter/sugar mixture.
  5. Add dry ingredients to the mixture.
  6. Mix until combined.
  7. Add the chocolate chips/raisins.
  8. Use a small ice cream scooper and place each ball of dough on a non-stick cookie sheet and spread apart.
  9. Bake for 10-12 minutes or until golden brown.

Anyways, I’m about make some breakfast wraps for the fam and then head down to Santa Monica/ Beverly Hills to spend the day and do some shopping!
