Blueberry Banana Muffins + Shopping Galore!

The bar mitzvah planning has all been coming together! Mom is home (YAY!) and family friends fly in from Maryland tomorrow! It’s starting to get crazy around here with last-minute errands plus getting everything together for COLLEGE! Ahhh it’s so closeee, just three more weekss!!

Since I haven’t baked anything in what seems like forever, I woke up this morning and made The Biggest Loser Banana Berry Muffins! They were super yummy, moist and healthy, without being too sweet. Just the way I like them 🙂

Berry Banana Muffins

Makes 12 (1-muffin) servings

Ingredients

1 1/2 cups unprocessed wheat bran or oat bran ( I used 1 cup wheat bran and 1/2 cup oat bran)
1 cup white whole wheat flour
2 tablespoons ground flaxseed
1 1/4 teaspoons baking soda
1 teaspoon ground cinnamon
1/8 teaspoon salt
3/4 cup unsweetened vanilla almond milk or fat-free milk  vanilla soy milk
1/4 cup agave nectar or dark honey
2 ripe medium bananas,mashed with a fork
1 large egg
2 tablespoons olive oil  no sugar added applesauce
1 teaspoon vanilla extract
1 cup fresh (or frozen) blueberries
1/2 cup pitted chopped prunes (optional)

Method
1. Position a rack in the center of the oven and pre-heat the oven to 400 degrees F. Lightly coat a nonstick 12-cup muffin pan with cooking oil spray.

2. In a medium bowl, combine the bran, flour, flaxseed, baking soda, cinnamon, and salt. Set aside.

3.In another medium bowl or in a blender, combine the milk, agave nectar or honey, bananas, egg, oil, and vanilla until smooth.

4. Make a well in the center of the dry ingredients and pour in 1/3 of the liquid mixture. Using a spoon, stir until smooth. Add the remaining liquid mixture and stir just until combined. Add the blueberries and prunes, if desired; stir again, but do not over mix.

5. Spoon 1/4 cup batter into each prepared muffin cup. Bake for about 14 minutes, or until the tops spring back when pressed gently in the centers. Do not overbake. Cool in the pan on a wire rack for 10 minutes before removing the muffins from the pan. Serve warm, or cool completely on the rack.

Breakfast!

I really liked these muffins! They’re healthy, completely whole grain and have no added sugars!

After breakfast, I showered and got ready for a big day of shopping. OH, but first I played around with my new I PHONE!! It’s so cool, I love it!

Lunch

Grilled Cheese is literally one of my all-time favorite sandwiches.

My version is 1 slice of cheddar cheese and 1 laughing cow light spread on both sides of 2 slices of whole wheat bread! SO creamy and delicious! It literally melts in your mouth!

I also had some carrots and an apple on the side!

At the mall, I got a pair of black heels for the Bar Mitzvah party, two shirts from Urban Outfitters, eyeliner and mascara from Sephora, and two bras from Victoria’s Secret!

Yes I DO spend a lot of time shopping and yes I DID spent approximately 5 hours at the mall. ( You probably won’t believe me, but I’m really not a compulsive shopper!)

Mom was carrying some of the other bags. Trust me this isn’t all of it!

Dinner

Turkey Meatloaf, brown rice (sprinkled with cumin of course!) and some steamed veggies.

Just what I wanted!

After dinner, I went out to do some errands with my mom, and watched The Bachelorette! It’s down to the final two and honestly, I think Ashley would be happy with JP or Ben 🙂

Shopping sure does wear you out! I’m off to sleep! Night guys!
